This low carb granola recipe is hands down going to be one of the best paleo and keto granola options you’ve ever tried! You’ve probably noticed, there aren’t a lot of low carb snack options out there, so coming up with this easy and delicious keto cereal was a must.

INGREDIENTS
1 Cup (170g) Raw Almonds
1 Cup (125g) Raw Pecans or Walnuts
1 Cup (150g) Raw Hazelnuts
1/2 Cup (60g) Pumpkin Seeds
1/2 Cup (65g) Sunflower Seeds
1 Cup (96g) Unsweetened Shredded Coconut
1/3 Cup (45g) Sesame Seeds
1/3 Cup (55g) Chia Seeds
Heaping 1/2 Cup (80g) Confectioners Swerve …. *Use (100g) if you like your granola really sweet.
Just less than 1/2 Cup (110g) NO SUGAR Peanut Butter
2 (70g) Egg Whites
1 Tsp. (5g) Pure Vanilla Extract
Pinch of Salt
***Optional: 1/2 Tbsp Ground Cinnamon
INSTRUCTIONS
1) Preheat your oven to 350℉ (177℃).
2) Line a baking sheet with parchment.
3) Add all of the nuts, half of the pumpkin seeds, and half of the sunflower seeds to your food processor. Pulse to roughly chop nuts/seeds. ***Do NOT over pulse; you do not want a fine meal.
4)Transfer the mixture to a large bowl. Stir in the rest of the dry ingredients.
5)In a separate bowl, whisk the wet ingredients together. Add this to the dry ingredients. Mix together.
6)Spread mixture in an even layer onto the prepared baking sheet and flatten with your hands and a rolling pin.
7)Bake for 25 minutes or until golden brown. Remove the tray from the oven and let cool.
8)Use your hands to break granola apart into pieces.
9)Store in a cool, dry place in an airtight container.
